Combine all ingredients in a blender or food processor, and blend until all smoothly combined, about 30-45 seconds. Let batter rest for 5 minutes. Heat nonstick skillet or griddle to medium heat, and lightly spray with nonstick cooking spray. Pour 1/4 cup of batter onto heated surface, turning pan or spreading to make an even, thin layer of batter. Ready to flip when the pancake surface is covered in bubbles and is firm. Gently flip and cook another 30-45 seconds.

You can add toppings of your choice, such as blueberries or chocolate chips when you first pour the batter into the pan. Serve by themselves, or with sugar free syrup for a very yummy, protein packed breakfast or snack!
