seperate lumpia wrappers, using only 20 at a time so wrappers will not dry out. leaving remaining in fridge until next round.
take one wrapper lay in front of you in a diamond shape scoop about 2 tsp of filling in and roll making sure to tuck sides in and using remaining sauce to seal lumpia roll. place each roll on a tray in freezer so lumpia will not fall apart from moisture or if prefer you can roll and fry at the same time until done, making sure to drain fried lumpia on paper towel.
