Marinade chicken breasts in balsamic vinegar, dijon mustard, and minced garlic. The longer you marinade it the better. Place chicken in skillet and pour marinade over it. Cook on medium on each side about 5 minutes. While the chicken is cooking, add sliced red onions and 2 teaspoons thyme. If there is not enough liquid add a little more balsamic vinegar and let the onions cook down. Once the onions have started to caramelize add a little chicken broth to deglaze the pan.
