Combine cheese, bacon, peppers and scallions in a mixing bowl. Divide into 4 equal pieces; roll into balls and smash into 2in disks; set aside.
Combine beef, salt, pepper, onions and W. sauce in a mixing bowl. Mix gently to avoid making the burgers dense. Divide into 4 balls. Use thumb to make a circular indentation in meat about 2in wide and 3/4 way through ball. Place a disk of cheese into each burger. Pinch sides of burger around cheese to completely surround it. Reshape into balls to form 4-5in patties. Place onto a tray; cover with plastic wrap and refrigerate for 30 min.
Preheat pan over medium/high heat. Lightly brush grill with oil. Season burgers with salt and pepper then place on grill. Cook for 6-8 minutes. Turn the burgers and cook an additional 5-6 minutes for med-med-well. Remove burgers to a platter.
Lightly brush onion rings with oil and season with salt and pepper. Grill onions until they are slightly soft, 2-3 min per side.
