Wash potatoes in cool water removing all dust and dirt. Poke holes into the potato with a fork all around the outside. Cover in a light coating of olive oil and place in baking pan.

Put the pan in the oven for about 45 minutes at 225 degrees. Keep turning them every 15 minutes to make sure they are cooking evenly. You should be able to poke with a fork and slide it out easy when they are done. Remove from the oven and allow the potatoes to cool.

Once cool, cut each potato in half and use a spoon to remove the middle of the potato. Leave a small layer of potato on the skin. Cut all skins in half again and place back into the pan. Cover in a light coating of olive oil, thyme, salt & pepper.

Place pan back in the oven for 30 minutes at 225 degrees. Be sure to turn the potatoes during this time until they are brown.
Take the skins out and salt & pepper to taste. At this point, you can add toppings. For hot toppings such as melted cheese add right away. For a cooler touch such as ranch dressing or sour cream wait a few minutes for the skins to cool then top them off.
