Drain chick peas through a strainer or sieve and wash them
under cold running water.
Spread them on paper towels to dry.
Place the chick peas, salt, garlic, 1/2 cup of oil, and 1/4
cup lemon juice in blender or food processor and blend for
10 seconds.
Stop the machine, and scrape down the sides with a rubber
spatula.
Blend again (at high speed if you are using a blender),
adding as much additional oil as you need to keep the
blender from clogging.
The finished hummus should be smooth and keep its shape
when dipped up with the pita. Add more lemon juice or salt
if you like. I tend to add more lemon juice, and go lighter
on the garlic for this recipe.
Transfer the hummus to a small serving bowl, and sprinkle
with parsley or mint. Mint is really preferable and tastes great.
Cut pita bread into wedges, and arrange them on a large plate
around the bowl of hummus, and dip away.
