6 medium white potatoes (2 1/2 lbs.)

1 large onion

1 large carrot

1/4 cup matzo meal

1 1/2 teaspoon salt

1/4 teaspoon white pepper

2 eggs, beaten

1/4 cup peanut oil

Instructions |

|
Grate potatoes, onion, and carrot in processor.
|
|
|
Add remaining ingredients and mix well.
|
|
|
Pour into well greased 1 1/2 qt. baking dish.
|
|
|
Bake at 375 degrees F for about 1 hour.
Top should be brown and edges should be crispy.
