Place vegetables in a large bowl. Sprinkle with a small amount of olive oil or canola oil, and a seasoning of your choice such as-garlic powder, Cajun seasoning, dry Italian herbs, salt or black pepper. Toss together.
Place vegetables on a hot grill. Cook veggies on each side, turning with a spatula. Grill until they are slightly tender, about 1 to 3 minutes.
Remove from grill and cut into large strips. Cool before eating.
