|
-season the chicken and dust with flour.
-add oil to large pot
-brown off chicken in batches if needed.
-remove from pan.

-add the quartered onions.
-add the chopped up bacon.
-stir for 5-8 mins.
-add the garlic.
-add the flour and keep stiring for a min.

|
-add the mushrooms, the orange zest and redcurrent jelly.
-keep stirring.
-pour in the red wine and deglaze the pan.
-pour in the stock.

-turn down the heat and return the chicken to the
pan making sure the liquid fully covers the chicken.
-season with salt and pepper.
cook for 50 mins keep stirring occasionally.
