Steam cauliflower til tender, about 7-10 min.
Combine cauliflower, cream cheese, nutmeg, and
S&P. Use a potato masher to smash the bejeezus out
of it. Will yield about 2 cups smashed
cauliflower. Can be jazzed up any way you would
jazz up mashed potatoes--seasoned salt, vegan
ranch dressing, etc.
