2 packages (3 oz each) vanilla cook and serve pudding mix
1 tsp grated orange zest
1/4 tsp orange extract
2 Tbs confectioners sugar
Instructions
Preheat oven to 350. Line 9 inch square baking pan with enough foil to overhang sides by 2 inches. In bowl, mix cracker crumbs, melted butter and honey until moistened; press onto bottom of pan. Bake 10 minutes. Cool completely on rack.
Meanwhile, in pot, stir together milk and pudding mix; over medium low heat, bring mixture to a boil, stirring frequently. Cook, stirring 1 minute. Remove from heat. Sitr in zest and extract. Spread over crust in pan.
Coat sheet of plastic wrap with cooking spray; place directly on top of filling, sealing to edges. Refrigerate until fir, 3 to 4 hours. Gently peel off wrap. Using foil, lift from pan. Sprinkle with sugar. Cut into bars.
