1 can black beans (15.5 oz)
|
|
1 medium yellow onion, chopped
|
|
2 celery sticks, chopped
|
|
3 strips cooked bacon
|
|
1 can stewed tomatoes (14 oz )
|

1/2 cup yellow corn
|
|
1 garlic cloves, chopped
|
|
1 cup chicken broth
|
|
1/4 tsp chili powder
|

|
|

Instructions |

|
In medium sized soup pot, cook the onions, garlic,
and celery in some olive oil, about 5 minutes or
until the onions are soft.
|
|
|
Add the black beans (juice and all), tomatoes,
yellow corn, chicken broth, bacon and chili powder.
Simmer on low heat for about 20 minutes.
|
|
|
In a food processor blend the mixture together and
return to the soup pot. Add salt and pepper to taste
and serve with a small spoonful of sour cream.
