Bring a pot of salted water to a boil and cook noodles as directed.
Remove sausage from casings and, in a large skillet, crumble and brown over medium heat. Add thyme to the sausage. Meanwhile dice tomato and set aside.
Once sausage shows no more signs of pink, add kale, salt, pepper, red pepper, and water/broth. Cook down.
Drain your al dente pasta and add to the skillet with the other ingredients and tomato. Toss to combine and top with grated parmesan.
