Sift and whisk together flour, cocoa powder,
espresso powder, sugar, baking soda and salt in
medium bowl; set aside.

Mix water, vanilla extract, oil and apple vinegar.
Slowly pour wet mixture into dry and gently stir
until combined and lump free.

|
|
Fold in peanut butter chips. Fill cupcake/muffin tin
each 2/3 full.
|
|
|
Bake at 350 degrees for 20-25 minutes. Cool for 10
minutes.
