2 Tbsp. canola oil or walnut oil
|

2 Tbsp. lemon juice
|

1 Tbsp. honey
|
|
1 small shallot, minced
|
|
1 cup peeled & shredded celery root
|
|
1/4 cup chopped walnuts, toasted
|
|
2 cups shredded carrots (4 medium size)
|

1/2 tsp salt
|
|
1/4 tsp pepper
|

Instructions |
|
|
To peel celery root (celeriac) you need to remove thick skin with
knife and peel at least 3 times to remove it
|
|
|
To toast walnuts- 375 F on parchment paper for 5-10 minutes
|
|
|
Whisk oil, juice, honey, shallot, salt & pepper in a large bowl.
Add carrots, celery root, raisins and walnuts. Toss to combine.
