Heat oven to 325 degrees. In medium bowl, make filling by
mixing together spinach, feta cheese, mayonnaise , walnuts
and garlic. Lay chicken on a cutting board. Place about 1/2 C
down center of each cutlet. Roll and secure with wooden
toothpicks. Wrap each cutlet with 1/2 bacon strip. Sprinkle
with paprika.
Place on rack coated with cooking spray in a shallow baking
pan. Bake 55 to 60 minutes, or until internal temperature
reaches 160 degrees.
Per serving- 245 calories (31% from fat), I g fat(1.7 saturated),
36 G protein, 7 g carbohydrates, 70 mg cholesterol, 759 mg
sodium, 2 g dietary fiber.
