2 (6 ounce) skinless, boneless chicken breast halves
1 Granny Smith apple, cored and diced
1 T & 1ts lemon juice
head romaine lettuce, chopped
1 avocado, diced
2-1/2 ounces feta cheese, crumbled
1 cup diced fresh strawberries
1/2 cup dried cranberries
1/2 cup balsamic vinaigrette, or to taste ... see recipe below
Instructions
prepare chicken breasts as desired. i season and cook mine on a grill pan. set aside.
Toss the diced apple with the lemon juice in a large mixing bowl until well coated; drain and discard any excess lemon juice. Place the lettuce into the mixing bowl, then sprinkle with the diced chicken, avocado, feta cheese, strawberries, and cranberries. slice chicken and add to salad. Gently toss the salad with the balsamic vinaigrette, and serve immediately.
1/4 cup balsamic vinegar
2 teaspoons dark brown sugar, optional
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil

for the balsamic vinaigarette.....Beat the vinegar in a bowl with the optional sugar, garlic, salt and pepper until sugar and salt dissolves. Then beat in the oil by droplets, whisking constantly. (Or place all the ingredients in a screw-top jar and shake to combine.) Taste and adjust the seasonings.
