In a saucepan, stir together sugar and 1 1/2 cups water over medium heat until sugar dissolves. Let cool, then strain, cover, and chill. (It will keep for 2 weeks.)
To 2.0 it, bring to a simmer with grated peeled fresh ginger, basil leaves, lavender, or mint and let steep for 30 minutes. Strain before pouring into a jar.
