Handful of freshly chopped parsley (dried is OK but only use 1 -2 teaspoons)
Instructions
In a large pan, gently cook the onion in the butter or oil until softened. Next add the carrots, stir and cook for 2-3 minutes
. Add the lentils and stock. Bring to the boil and then simmer gently for 15 – 20min
Check the soup after 10 – 15 min, as the lentils cook you may need to add a bit more stock. Once everything is cooked – blend the soup in a processor/liquidiser. Season to taste and stir in the parsley.
