Melt the butter in a pan and add the peas, onions, and herbs. Cook gently for 10 minutes, shaking the pan.
Tie the lettuce heart with fine string, then add to the pan. Add the sugar and salt and pepper to taste. Pour in enough boiling water to just cover the peas and simmer gently, uncovered, until the peas are tender.
Untie the lettuce heart and stir the leaves into the peas and onions. Serve immediately.
