2 cups all purpose flour ( or 2/3 cup semolina flour and 1 1/3 cup AP flour)
2 eggs, room temperature
1/4 cup water
food processor needed
Instructions
Set up food processor with metal blade. Measure flour into food processor. Break two eggs and add to flour. Start processing and slowly add the water through the top.
Process for 1 to 2 minutes. The dough should be softly firm, not sticky. Depending on the humidity it may take a little more water or a little more flour. Remove ball of dough and knead 5 or 6 times on a lightly floured surface. It should feel like a baby's smooth bottom! Cover with plastic wrap and let rest while you make the filling or sauce. Then make your pasta!
