3 cups finely shredded, peeled potatoes, well drained.

2 eggs, well beaten

1 1/2 tbsp. of all purpose flour

1/8 tsp. of baking powder

Applesauce or maplesyrup.

Instructions |
|
|
1. In mixing bowl, gently combine potatoes and eggs.
|
|

2. Combine dry ingredients and onion; stir into potato mixture.
|
|
|
3. Drop by tablespoonful onto a preheated, greased skillet.
|
|
|
4. Brown lightly on both sides. Serve with applesauce or syrup if desired.
