1.Preheat your oven to 375 degrees. Lightly grease and flour a 10.5x15.5-inch jelly roll pan.
1.In a large mixing bowl beat the sugar, sour cream, butter, and eggs with an electric mixer on medium speed until well blended, about 1 to 2 minutes.
2.Beat in the bananas and vanilla on low speed until blended, another minute or so.
3.Beat in the flour, salt, and baking soda on medium speed for 1 minute more.
4.Spread the batter evenly into the prepared baking pan.
5.Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean and the bars are golden brown.
6.Remove from the oven and place the pan on a wire rack to cool completely.
7.Once your banana bars have cooled you can sprinkle them with confectioners sugar or spread them with browned butter frosting.
8.Cut into desired size bars - small, medium or super-sized - it's your choice.
