Combine first 6 ingredients in a large bowl; stir
well. Combine buttermilk,corn, and egg; add to dry
ingredients, stirring just until moistened. Stir in
onion and tomato.
Pour oil to a depth of 2 inches into a Dutch oven;
heat to 375 degrees. Drop batter by rounded
teaspoonfuls, in batches, into hot oil. Fry 2
minutes or until golden, turning once. Drain on a
wire rack over paper towels.
Diner secret- Keep a can of beer handy. Stir in a
little if the hush puppy batter is stiff.
