Heat the oil in soup pot over medium heat. add onions and cook
for 1 min, stirring often.
MEANWHILE - microwave broccoli for 4 minutes, uncovered, on
high to begin defrosting.
raise heat to high and add chicken broth, worcestershire, and
tarragon. cover and bring to a boil. as soon as it boils, add the
broccoli. cover the pot and bring the soup back to a boil, then
reduce heat to low.
Cook soup at a simmer for 8 min to develop the flavor. just before
serving, stir in cheddar, parmesan, and sour cream. add salt and
pepper. Simmer without boiling until the cheese melts, then stir and
serve at once.
