Heat oven to 450. Cut the pork almost in half lengthwise without
cutting through the bottom of the pork, and open like a book.
Place the pork on a rimmed baking sheet and rub all over with 1
1/4 t cumin, 1/2 t salt, and pepper. Brush all over with oil.
Roast pork for 15 minutes or until cooked through and still juicy.
Transfer to a plate and tent with foil. Let sit for 5 minutes before
thinly slicing crosswise.
While the pork is sitting, in a small bowl, stir together the yogurt,
remaining 1/4 t cumin, and remaining 1/4 t salt.
in a medium bowl, combine pork, salsa and toss to coat. Divide
among the tortillas, placing the meat in the center. Top evenly with
the saw mix and then the yogurt mixture. Fold, roll, eat.
