1x 400g chopped tomatoes in tomato juice in carton
100g dried apricots, chopped into small pieces
300g cous cous
Instructions
Heat 2 teaspoons oil in a heavy based saucepan, add
the lamb and fry until slightly browned. set aside.
heat the remaining teaspoons oil in the pan, add the
onion, garlic and cinnamon, then cook for about 10
minutes until soft.
return the lamb to the pan and stir in the tomatoes
and apricots. fill the tomato carton with water and
add to pan. partly cover and simmer gently for 1
hour or until the lamb is tender.
prepare the cous cous following pack instructions
and serve with the lamb.
