|
take the string off of the chicken and open the legs
out. immerse the chicken in a water and salt
solution (60g per litre) and leave over night.

dry and remove the wishbone and stuff the chicken
with the fresh thyme and 1 whole lemon, then smother
the skin in butter.

|
preheat the oven to 190c and cook for 1 and a half
hours, take the temperature at the thickest part of
the breast. it should be 60c-75c. once done rest the
bird for 45 mins.

then turn the oven to the highest temperature, baste
the bird then cook for a further 10 mins. season
with salt and pepper.
