Grease or line muffin cups. In medium bowl combine wheat bran, whole wheat flour, wheat germ, baking soda, baking powder, nutmeg and cinnamon. Add walnuts and chopped fruit.
In large bowl beat egg. Add milk, honey, applesauce, oil and vanilla.
Add dry ingredients to wet ingredients and stir just until moistened. Spoon into muffin cups.
Bake at 400 degrees for 15 minutes. Let cool in pan on rack for 10 minutes. Remove from pan and cool completely.
