Coat non-stick frying pan in spray oil and heat to
medium heat.

Dice brown onion and bacon finely and saute in
medium hot pan so they cook slowly to a buttery
colour. Be careful not to cook too fast or too hot,
they will burn and be bitter. Take off heat.

Beat egg yolk into cream and add 2 tblspns of hot
water to temper (raises heat of egg mixture so it
won't curdle when added to bacon mixture). Add to
bacon mixture and return to med-low heat.

|
Once cream starts to colour with the mixing of other
ingredients grate over nutmeg and stir in. Stir in
finely grated parmesan before serving.
