1 can (1 lb,10oz) whole, mild green chilies or 18 whole canned chilies
1 lb Monterey Jack (I like hot), cut in strips about 1in wide,3 in long and ¼ in thick
5 x-large eggs or 6 large
¼ cup un-sifted flour
½ teaspoon salt
1 ¼ cup milk
pepper to taste
red pepper sauce to taste
½ lb shredded cheddar cheese
paprika
Instructions
Rinse seeds from chilies. Spread chilies in single layer on paper towel. Carefully pat with other towel until try. Slip a piece of Monterey jack into each chili. Arrange chilies into a well greased baking dish.
Thoroughly beat eggs. Gradually add flower. Beat until smooth. Add milk, salt, pepper and red pepper sauce. Beat thoroughly
Sprinkle cheddar cheese on chilies and generous amount of paprika. Carefully pour egg mixture over top
Bake uncovered preheated to 350 degrees for 45 minutes or until knife inserted dish comes out clean.
