Combine all ingredients in order, in a large bowl. Mixing as you go.

Preheat oven to 350. Thoroughly spray 12 muffin/cupcake pan with nonstick spray.
Evenly divide mixture into 12 cups.

Bake 30 to 45 minutes until pick comes out clean.
Each muffin is 204 calories and can be frozen for individual servings. To reheat: Place upside down and microwave for 1 m1nute, then turn over and nuke 1 more minute.

For company this can also be made in a large casserole, Serving about 6 to 8 people, depending on what else you serve.
Option: replace 1/4 cup of milk with red wine.
