NOTE- ALL INGREDIENTS ARE TO TASTE.
Preheat oven to 425 degrees. Peel and cut the potatoes into wedges. Mix all the spices in a small bowl until well combined. Rub the potato wedges with olive oil then sprinkle spices over them. Toss until each potato wedge is well coated. Spread over a baking sheet and roast in the center of the oven for 30 to 40 minutes. Gently stir now and then to prevent burning.
