Cod with cauliflower puree, bacon crumb and fennel

Ingredients
400g Cod loin
1 fennel
1 small cauliflower
2 rashes of bacon
breadcrumbs
1 lemon
white wine optional
green beans
garlic
shallots
milk or cream
Instructions
Cauliflower Puree.
Cut cauliflower into 1 inch pieces and boil until
tender, blend to a fine puree with milk or cream,
salt.
Bacon Crumb.
Fry bacon with a little oil until crispy, add
breadcrumbs and fry until golden and fat has been
absorbs. Crumble into a chunky crumb.
Blanch beans
Slice fennel finely and fry until it begins to
colour, add garlic and shallots until soft, then
season with salt, pepper and add beans, lemon
juice and or white wine.
Coat cod with olive oil and season well, bake until
internal temperature reaches 55 degrees.
