Boil potatoes whole until tender. Refridgerate
overnight. Peel potatoes and cube into small pieces.
In a saucepan, melt butter. Add cheese and stir
until melted. Add the sour cream, green onions and
ranch mix. Stir until smooth. Salt and pepper to
taste. Add potatoes and combine.
Pour into 9x13 baking dish and bake on 350 degree
oven for 20-30 minutes or until top is golden brown.
