Lightly coat a 2 quart baking dish with nonstick
cooking spray. For the topping, in a small bowl
combine breadcrumbs, melted butter, and Parmesan;
set aside.
Bring a large pot of water to boiling over medium-
high heat. Add cauliflower; cook 7-9 minutes or
until form tender; drain. Return to pot; set aside.
Meanwhile, for the cheese sauce, in a medium
saucepan melt butter over medium heat. Add flour;
cook and stir 1-2 minutes or until thickened.
Gradually whisk in milk; bring just to boiling.
Remove from heat and add cheddar and 1/2 cup of
the Gouda, stirring until smooth. Add cheese
sauce and remaining 1/2 cup Gouda to cauliflower;
stir to coat. Transfer cauliflower mixture to
baking dish and sprinkle evenly with topping.
Preheat broiler to high. Broil 1-2 minutes or until
golden brown. Remove from over, and serve.
