Add all ingredients to a bowl and mix. Adjust mayo and curry amounts to suit your tastes.
If you are using canned chicken, make sure it is all breast meat and a good brand. Otherwise, leftover rotisserie or any chopped chicken breast will work.
You can also add or omit pretty much anything except the curry, the chicken, and the mayo. I sometimes use a Sunkist bag of dried mixed fruit which has apples, raisins, cranberries, and some tropical fruit in it. You can also add onion and/or nuts and it comes out great.

Serve on it's own or in a lettuce wrap, salad, or low carb wrap. Makes a great snack, lunch, or side.
