In a large bowl, beat sugar, butter, egg yoke and vanilla until light and fluffy. Lightly
spoon flour into cup; level off. Add flour to sugar mixture; mix well. Stir in potato chips
and pecans.
Roll dough into 1-inch balls. Place 3 inches apart on ungreased cookie sheets. Dip
bottom of a 3-inch glass in remaining sugar. Flatten balls. Be sure to coat glass with
sugar before flattening each cookie.
Bake at 375 for 12 to 15 minutes or until golden brown. Cool slightly before removing
from cookie sheets.
