1.)Place large saucepan over medium-high heat.Add first 8 ingredients. Bring to a boil and reduce heat to a strong simmer. Tilt lid and cook for 25 minutes or until rice is tender.
2.)Add bell pepper, green onions and turkey or chicken. Cook another 5-10 minutes
3.)Add chopped parsley.

serve in hot shallow bowls, accompanied by crusty bread and a salad.
