flour and sugar in a mixer add cold butter and mix
till butter is broken ...add lemon rind ... add
beaten eggs (beat them in a bowl and add gradually
till a dough ball forms) ... just in case eggs are
too big and you dont need them all. As soon as
dough forms beat for a couple of beats and put in
cling film in fridge.
filling
ground almonds (if using PURE almonds add some
almond essence) - mix sugar in with a spoon ....
add orange juice till mixture is sticky and you
can pick with fingers .... and basically just
place bits of filling on the pastry shape .....
once bottom shape is filled with the filling ...
seal top and bottom bits of pastry with some water
