Defrost spinach, drain. Heat olive oil and add
onions, carrots, celery, garlic and seasonings.
Stir until onion is tender. Add brother, bring to
boil. Add well drained spinach and meatballs.
Drain and rinse beans and add to pot. Cook slowly
until meatballs are heated through. In small bowl
mix cheese, salt, pepper and egg. Whisk with fork
and then add to soup. Stir and cook until slightly
thick.
