500g basmati rice rinse under running water in a
colander
1 cup roasted cashew nuts
1/2 cup sultanas
1teaspoon mustard seeds whole or ground
Prepare your spice mix -1/2 tspn curry (hot or
mild whichever you like) 1 tspn freshly ground
pepper,1/4 tspn ground cloves ,1/4 tspn ground
cardamom & 1tspn tumeric1/2 tspn cinnamon
,optional cayenne or chili powder
1 chopped onion
1ltr stock or water
salt

Heat about 3 tablesppons oil in a pot and when its
very hot add a teaspoon of mustard seeds they will
pop and splatter letting off the flavor. Have your
spices ready and add them to the hot oil 1 tspn
all spice,1/2 tspn curry (hot or mild whichever
you like) 1 tspn freshly ground pepper,1/4 tspn
ground cloves ,1/4 tspn ground cardamom & 1tspn
tumeric. then add a finely chopped onion ,fry a
bit then add 1/2 cup sultanas and 3/4 cup cashew
nuts and fry while stirring. Then add 500g basmati
rice which you have rinsed in a colander ,mix it
with the onion,sultana & cashew nuts for about 2
minutes then add 1ltr water or stock ,add salt
then cover and simmer ,do not stir again . To know
if its ready when you lift the lid you will see
small holes on the top and the water is all
absorbed. Take off heat and let it stand for a few
minutes before serving.
