Preheat oven ,160C and grease a 13in by 9in cake
dish or tin
In a bowl mix the liquid ingredients and stir in
the chopped apples.
In another bowl sift the flour,baking powder &
baking soda.
Add the sugar ,grated lemon zest,salt & cinnamon.
Pour the liquid mixture over the dry ingredients
and mix with a wooden spoon until it is smooth do
not over beat.
Then spread half the batter in the dish and place
the prunes over the batter then sprinkle 1/4 of
the cinnamon & brown sugar over the layer.
Mix the cinnamoSpread remaing batter and smooth
over.
n and brown sugar with the butter and put small
pieces of this mixture on top .
Bake for about 40-50 mins ,if you see that top is
browning yet its still not ready when you
Let it rest 15 minutes before serving. Can be
served with warm custard . check with toothpick or
skewer cover top with foil .
