1) Cook quinoa with 2 cups of water in a rice
cooker. Use this time to prepare vegetables and
other ingredients. Once the quinoa is cooked, set
aside to cool.
2) Combine all chopped veggies with black beans in a
large bowl. Add in the lemon juice and vinegar.
3) Toss with the cooled quinoa to combine
ingredients. Add in salt and pepper, as well sugar,
to taste.
