Preheat oven to 350 degrees. Grease a 9x5 loaf pan and set
aside.
In a medium-large, combine the first 4 ingredients and mix
until well blended. In another large bowl, combine the sugar,
flour, baking soda, salt, and cinnamon. Then slowly pour it
in the medium-large bowl, mixing until batter forms.
Pour the batter into the prepared loaf pan. Bake for 1 hour
or until a toothpick inserted in the middle comes out clean.
Let cool completely before removing from pan and slicing.
Keep in an airtight container for up to a week.
