3 cups shredded fresh zucchini

1- 1/4 cup sugar
|
|
1 cup egg whites
|

3/4 cup unsweetened applesauce

2 tsp vanilla
|

3 cups flour

2 tsp baking soda
|

1/2 tsp baking powder
|

1 tsp salt

Instructions |
|
|
1) Preheat oven to 350°F. Line 24 muffin cups with
muffin paper wrappers. Cream together the zucchini,
sugar, egg whites, apple sauce and vanilla.

2) Mix in the flour, baking soda, baking powder,
salt and cinnamon. Pour into muffin cups.
|
|
|
3) Bake for 25-30 minutes, or until a toothpick
comes out of the centre clean.
