Make a rub with the garlic, salt, mustard, honey, thyme and pepper. Rub on top of the 8 or 9 bone rib roast piece.
Place in roasting pan or foil(large) pan on a rack.....
Cook at 325 for 2 hour or until it reaches 160 or so. Use a thermometer....
Take out and cover tightly with foil for 15 minutes or so.....
Serve on platter--slice through ribs....
