Melt 1 tablespoon butter in a small glass bowl in the microwave. Rinse the chicken and pat it dry. Combine the bread crumbs and the cheese in a small, flat dish, like a pie plate. Swipe the chicken through the butter, and then roll it in the bread crumb mixture. Lay each piece of coated chicken on a dinner plate while you coat the rest.
