Heat oil in large skillet over med-high heat. Add shallot and
cook, stirring, until softened (3-4 min). Add the cauliflower and
1/4 teaspoon salt and pepper. Cook, tossing occasionally, until
golden (4-6 min). Add apple, thyme, and 1/2 cup water. Cover
and cook until cauliflower is tender (8-10 min). Stir in butter
and sprinkle with pecans.
