Pour oil into a 9 x 13 inch pan. Scrub potatoes. Cut lengthwise into quarters. Blot cut edges with paper towel. Put potatoes in pan. Turn to coat evenly with oil; leaving potatoes cut sides up in single layer. Sprinkle with paprika, salt, pepper and cheese, if used. Bake at 425 degrees for 30-40 minutes or until fork tender. Serve plain or with sour cram. Add extra salt and pepper, if desired.
